Seafood Consommé - scallop, shrimp & lobster dumpling, fines herbes
Bruleed Chevre Salad - baby greens, smoked hen, blueberry jam, pecans

Course 2 (Choice of:)
Vol a Vent - creamy mushroom filled pastry, shaved truffle, artichoke & brie cheese
Veal Sweetbreads - Turkish spiced couscous, pomegranate reduction
Tuna Tataki - seared ahi tuna, white soy, avocado oil, calamansi citrus
Course 3 (Choice of:)
Filet Mignon - wild mushroom & brandy caper sauce, pureed celery root, mustard greens
Branzino - mediterranean seabass, baked with roasted tomato & lobster butter, julienne vegetables & fingerling potatoes
Gateau de Crepes - savory crepes stacked with fromage blanc & gruyere cheeses, fennel & leeks, guajillo puree
Boar Osso Bucco - blackberry demi-glace, gnocchi with butternut squash and sugar snaps
